Wow, it’s been 5 weeks since we last posted. Sheesh! I didn’t think we let that much time pass by while abandoning our blog.
Can you believe that Roberto went from this……
…….to this in less than 7 weeks?!
He sure is a big boy!
He already weighs about 12 pounds and he’s not even 2 months yet!
Things have been going great so far! Sure, we’ve had our fair share of rough days weeks & nights, but I’m enjoying every moment of it. He’s not the best sleeper, so my main goal is to get this little guy to rest as much as I can. I feel bad for him because whenever he cries, most of the time it’s because he just wants to sleep but doesn’t know how to on his own yet! I’ve heard fussiness for babies peaks and week 6 and then gets better.. Moms, is this true??!
As for me, recovery went pretty well. I’ve been lacking a little on eating healthy all the time. Normally I eat clean 90-95% of the time and indulge the other 5-10%, but since I had the baby, I went down to only eating clean about 60-70% of the time. We’re trying to adjust to our new lives and sometimes ordering a pizza for dinner is a huge help. (Thankfully, I stocked our freezer full of healthy meals which has helped a lot!) I’ve eaten more grains and sugar than I normally like too, but I know I’ll get back on track fast. I already am making big progress.
I’ve gotten more on track over these last couple of weeks and only expect things to get easier. Here is one healthy meal that I cannot get enough of.
Cauliflower “Rice.” Maria made if for me once right before I had the baby and now I’ve been making it weekly ever since. Even Rinaldo loves this and says that it’s super good! I’ll have to post a recipe one day. I basically finally chop the cauliflower in a food processor and then sauté it in olive oil with a chopped onion and some spices. Turmeric and red pepper flakes are our favorite!
I also like to keep healthy treats on hand for whenever I want to indulge in something.
Last week I made a double batch of Lisa’s PB cups and they hit the spot every time I reached for one! I ate the last one on Saturday so that means I need to make more sometime this week!
As for working out, besides for a few walks around the block, I haven’t done anything else. I just don’t have the energy to even think about doing more than that. To my surprise, I went back to my pre pregnancy weight and size pretty fast. I know that is totally not the norm, but I think it has to do with my oversupply of milk (burning a ton of calories), good genes and eating very clean and working out throughout my pregnancy. It’s kind of funny because Maria & I always joked how “big” we would get when we’d be pregnant. We never had a problem gaining weight and we had to work hard to stay at a weight we were comfortable with. I hope to get back into strength training some time next month though because I’m starting to feel weak. For now, I’ll count carrying a 12 pound baby around the house all day and my workouts!
We’ll actually be heading overseas to Italy in less than 2 weeks so I’m excited and nervous about that! Rinaldo’s family lives there and they cannot wait to meet Roberto! We’ve been sending them pictures everyday in the meantime just to keep them updated on all the changes he’s making. Once we get back, I’m hoping Roberto will be sleeping a little better and I’ll be able to fit in some workouts maybe 3-4 days a week.
