Where has the time gone??!

Wow, it’s been 5 weeks since we last posted. Sheesh! I didn’t think we let that much time pass by while abandoning our blog.

Can you believe that Roberto went from this……


…….to this in less than 7 weeks?!


He sure is a big boy!


He already weighs about 12 pounds and he’s not even 2 months yet!

Things have been going great so far! Sure, we’ve had our fair share of rough days weeks & nights, but I’m enjoying every moment of it. He’s not the best sleeper, so my main goal is to get this little guy to rest as much as I can. I feel bad for him because whenever he cries, most of the time it’s because he just wants to sleep but doesn’t know how to on his own yet! I’ve heard fussiness for babies peaks and week 6 and then gets better.. Moms, is this true??!

As for me, recovery went pretty well. I’ve been lacking a little on eating healthy all the time. Normally I eat clean 90-95% of the time and indulge the other 5-10%, but since I had the baby, I went down to only eating clean about 60-70% of the time. We’re trying to adjust to our new lives and sometimes ordering a pizza for dinner is a huge help. (Thankfully, I stocked our freezer full of healthy meals which has helped a lot!) I’ve eaten more grains and sugar than I normally like too, but I know I’ll get back on track fast. I already am making big progress.

I’ve gotten more on track over these last couple of weeks and only expect things to get easier. Here is one healthy meal that I cannot get enough of.


Cauliflower “Rice.” Maria made if for me once right before I had the baby and now I’ve been making it weekly ever since. Even Rinaldo loves this and says that it’s super good! I’ll have to post a recipe one day. I basically finally chop the cauliflower in a food processor and then sauté it in olive oil with a chopped onion and some spices. Turmeric and red pepper flakes are our favorite!

I also like to keep healthy treats on hand for whenever I want to indulge in something.

Last week I made a double batch of Lisa’s PB cups and they hit the spot every time I reached for one! I ate the last one on Saturday so that means I need to make more sometime this week!


As for working out, besides for a few walks around the block, I haven’t done anything else. I just don’t have the energy to even think about doing more than that. To my surprise, I went back to my pre pregnancy weight and size pretty fast. I know that is totally not the norm, but I think it has to do with my oversupply of milk (burning a ton of calories), good genes and eating very clean and working out throughout my pregnancy. It’s kind of funny because Maria & I always joked how “big” we would get when we’d be pregnant. We never had a problem gaining weight and we had to work hard to stay at a weight we were comfortable with. I hope to get back into strength training some time next month though because I’m starting to feel weak. For now, I’ll count carrying a 12 pound baby around the house all day and my workouts!

We’ll actually be heading overseas to Italy in less than 2 weeks so I’m excited and nervous about that! Rinaldo’s family lives there and they cannot wait to meet Roberto! We’ve been sending them pictures everyday in the meantime just to keep them updated on all the changes he’s making. Once we get back, I’m hoping Roberto will be sleeping a little better and I’ll be able to fit in some workouts maybe 3-4 days a week.

    I was so excited to see an update from you….and I dare anyone try and wipe the smile off my face after seeing that gorgeous little guy you have—isn’t it amazing how much they change in such a short time!? He’s such a cutie pie!

    Funny, those pb cups are in my weekly rotation…breakfast, lunch, and dinner!

    I love the update, and I’m so glad you’re doing well. The cauli rice is so yummy—I need my food processor back so I can make it more regularly (I did the cauli pizza the other day and grated it with a cheese grater….not ideal!).

    I’m sure your trip to Italy will be awesome–Roberto is going to love it :-)

    Yey! Hi, Lisa! So happy to hear from you! Roberto is so gorgeous. What a big boy! Wow! Ella is only 19 pounds and she’s 16 months hahahah…what a peanut. You are a supermom right now, he must be such a great eater (oversupply, how lucky!)! Sorry to hear about the sleep. I hate to tell you but there are a lot of fussy points. Growth spurts happen a lot, and it seems like he’s growing fast a furious so it is going to happen!

    I love Lisa’s PB cups. It’s been a few weeks since I’ve made them. They are addictive. And that looks exactly like the simple cauliflower rice recipe I’ve been posting/making! I make it with sauteed onions, garlic, turmeric and will throw other stuff in too. Ella and I love it! I make it weekly too!

    Don’t fret about not eating 90% clean or whatever too. You are nursing and you have a newborn. You have to do what you have to do! Go you for losing all the baby weight already. You didn’t gain too much and stayed healthy so that was probably a huge help! You know I have problems with it despite eating clean and exercising until the end AND breastfeeding. We all are so different, it’s funny. I am so happy to hear you are feeling well, recovery has gone well and you are just enjoying all of the moments with your beautiful little guy! I love watching on facebook :-)

      Thanks for checking in Laury!! It’s so fun to be experiencing being a mom, especially after watching you and other bloggers through your journey! I feel like Ella is my virtual niece! Lol :-)

      It is crazy how every woman’s body reacts differently to pregnancy. I have a friend who was always very lean and without chaining her eating habits gained 80 pounds!! She had no clue why she was gaining so much. I feel blessed to have had a great pregnancy.

      As for the fussiness, I totally agree that you can’t really keep up with them since they have so many growth spurts. I feel so bad for the little guy. He only took one 1 hour nap and the rest were little 20-30 min ones. I know he’s so overtired but it’s so hard to help him catch up. No matter what I try his napping won’t get better. I know I just have to give it time!

    What a cutie! I love how happy he looks in the first recent picture. I’m so happy you and Rinaldo are able to travel to Italy so you can share his joy with your whole family (and I’m selfishly eager to see more of your gorgeous eats & sights from Italy!)

    I will have to try making Cauliflower rice soon – I’ve heard so many great things about it but have never tried it myself yet.
