There are many fruits that pair so well together. Strawberries and bananas, apples and cranberries, mangoes and coconuts… the list goes on and on, but our all time favorite fruit combination is blueberries & peaches.
We try to bake with blueberries and peaches all summer long. Summer isn’t really summer without it. Well, summer is definitely happening this year, because we’ve already devoured a few blueberry peach crisps over this last month.
I spent the evening by Maria & John’s house last night. Rinaldo was working late, so I thought I’d spend some time with them. And I didn’t feel like cooking dinner and Maria so kindly offered that I eat dinner with them! (Maria played a joke on John and told him that my water broke. You should have seen the look on his face! hahahaha Poor Johnny!)

While prepping dinner, we went into her yard to see what was ready to be picked. She had a ton of cherry tomatoes, a few peppers and several plump peaches! Yessss. We knew right away that we wanted to bake something with the peaches.
I have to tell you though, I was a little jealous of her peaches. You see, Rinaldo & I have a peach tree in our backyard too. We had over a dozen peaches almost ready to be picked and when we went out to get some a few days later, they were no where to be found… Not a single one… We even checked on the ground. NADA. The only thing we can think of is that someone stole our peaches.
Yes, someone stole fresh peaches from a 9 month pregnant lady’s tree. I’d be very scared if I was that person! We will track you down!
At least Maria was kind enough to share her peaches with me! After some brainstorming, we decided to make some blueberry peach crisps. We have a go to crisp topping that we’ve been using lately. It’s grain free and tastes really good. It’s been tested by many of our family members and they all had great things to say about it as well!
Since berries and peaches are in season right now, we didn’t add a sweetener to the filling. The fruits are sweet enough on their own and without an added sweetener their flavors are able to shine and you can really taste the freshness of the fruit.
The topping is sweetened with honey, but you can use any sweetener you’d like. We only used 3 tablespoons in the entire recipe that serves 6 people, so each person is getting about 1\2 tablespoon of honey. Not bad for a summertime treat! I know crisps and cobblers are usually loaded with sugar, so I think our recipe is definitely one to try if you’re trying to watch your sugar intake and trying to eat healthier.
- 1 pint of blueberries
- 3 large peaches, peeled and sliced
- 1\2 tsp cinnamon
- 3\4 cup almond flour
- 3\4 cup unsweetned shredded coconut
- 3\4 cup walnuts, chopped
- 1\2 tsp sea salt
- 1\2 tsp baking soda
- 3 tbsps raw honey
- 1\4 cup coconut oil, melted
- Preheat oven to 350F.
- Place 6 ramekins on a baking sheet and set aside.
- In a medium bowl, mix together the blueberries, sliced peaches & cinnamon. Distribute the filling mixture evenly among the 6 ramekins.
- In another medium bowl mix together the remaining 7 ingredients to make the crisp topping. Crumble the topping mixture evenly over the fruit filled ramekins.
- Bake for 30 minutes.
- Let cool slightly before eating.
