Chocolate Peppermint Green Smoothie

If you would’ve asked me a few years ago what flavor I hated, hands down, it would’ve been mint. In fact, I despised anything with a bare hint of mint. I was very picky with my toothpaste flavors and thought people obsessed with anything mint, were weird. Get the point?

Over the past few years, this year in particular, things have changed. I couldn’t get enough of mint flavored sweets, drinks and candies. I was craving mint chocolate chip ice cream, like no other the last few months. I honestly thought I was pregnant because I’d never craved mint so badly. It’s so crazy to me, that something I nearly gagged at, was taking over my world.

Lately, my craving of anything mint was on the down low, until this past weekend. After my workout on Saturday, I was running errands and came across these at Target.

I was obsessed with these last year and couldn’t get enough of them. Even though I wanted to buy a bag to bring home, I was brave and resisted. With only 2 people living in my house, I knew that I would dominate that bag within 3 days…

When I got home, I was starving and I still had mint on my mind! I came up with the idea of incorporating chocolate and peppermint into my green smoothie for lunch and it was the greatest idea ever.

This smoothie was the shit bomb and totally satisfied my craving to the max.

Of course we all love enjoying our fair share of holiday treats, but try limiting indulgences to Christmas Eve & Christmas Day and one or two holiday parties. For the remainder of the season, go along your regular routine and fill up on fruits, veggies, protein and whole grains!

Chocolate Peppermint Green Smoothie

Ingredients
  • 1 1\2 cups unsweetened almond milk
  • 1 frozen banana
  • 1 pitted medjool date (optional for added sweetness)
  • 1\4 tsp xanthan gum (optional for thickness)
  • 2 tbsps cocoa powder
  • 1\8 tsp peppermint extract
  • 2 large handfuls fresh spinach leaves
  • 1 tsbp cacao nibs (optional)

Instructions
  1. Place everything in blender and mix on high for up to 2 minutes.
  2. Top with cacoa nibs to give you smoothie some crunch!

Pretty healthy if you ask us!

*If  you’d like to have more protein in your smoothies add a scoop of your favorite protein powder like we do sometimes.

    Haha I hate to be a hater but I’m not a mint fan! I like mint gum but that’s about it! I DO love green smoothies though :) they’re so tasty, filling and healthy!

    Lisa that’s so funny about your taste! They say your taste buds change every 7 years. That’s how I attempt to get Michael to try new things!
    This smoothie is right up my alley! Good job! I need to get some mint because I love it! Always have!

      It really is funny! I don’t really dislike too many foods or flavors, but mint was always a major one!

    Silly question but where do you find peppermint extract and why  can I never find it!!?  I have been having similar cravings as of late but don’t seem to ever see it in the store!!help!:)

    fyi… if you freeze your bananas first (in chunks in a baggie) you don’t need the thickener. :)

      Hi Laura! Thanks for your tip. I actually always do that but since I like to use a lot of liquid to make a large smoothie, I find it doesn’t make it thick enough!

    I love the idea of the 12 days of green smoothies! Chocolate/mint flavored sounds amazing…I’ve always been a mint fan (shamrock shakes are…were…my fave!).

    I also always loved mint choc chip ice cream when I was a kid. Mmmmm…. you just gave me an idea that I’m gonna have to try in the kitchen this weekend :)

    This is, by far, the best green smoothie I’ve come across yet! Used sweetened vanilla almond milk (and no added sugar), frozen banana, peppermint extract, cocoa powder & spinach. That’s all it took. Next time I will add more greens because you can’t even tell they are in there. The smoothie was plenty sweet & plenty thick. Thanks so much!
