If you would’ve asked me a few years ago what flavor I hated, hands down, it would’ve been mint. In fact, I despised anything with a bare hint of mint. I was very picky with my toothpaste flavors and thought people obsessed with anything mint, were weird. Get the point?
Over the past few years, this year in particular, things have changed. I couldn’t get enough of mint flavored sweets, drinks and candies. I was craving mint chocolate chip ice cream, like no other the last few months. I honestly thought I was pregnant because I’d never craved mint so badly. It’s so crazy to me, that something I nearly gagged at, was taking over my world.
Lately, my craving of anything mint was on the down low, until this past weekend. After my workout on Saturday, I was running errands and came across these at Target.

I was obsessed with these last year and couldn’t get enough of them. Even though I wanted to buy a bag to bring home, I was brave and resisted. With only 2 people living in my house, I knew that I would dominate that bag within 3 days…
When I got home, I was starving and I still had mint on my mind! I came up with the idea of incorporating chocolate and peppermint into my green smoothie for lunch and it was the greatest idea ever.
This smoothie was the shit bomb and totally satisfied my craving to the max.

Of course we all love enjoying our fair share of holiday treats, but try limiting indulgences to Christmas Eve & Christmas Day and one or two holiday parties. For the remainder of the season, go along your regular routine and fill up on fruits, veggies, protein and whole grains!
- 1 1\2 cups unsweetened almond milk
- 1 frozen banana
- 1 pitted medjool date (optional for added sweetness)
- 1\4 tsp xanthan gum (optional for thickness)
- 2 tbsps cocoa powder
- 1\8 tsp peppermint extract
- 2 large handfuls fresh spinach leaves
- 1 tsbp cacao nibs (optional)
- Place everything in blender and mix on high for up to 2 minutes.
- Top with cacoa nibs to give you smoothie some crunch!

*If you’d like to have more protein in your smoothies add a scoop of your favorite protein powder like we do sometimes.
