Since Maria is in Florida still, I was all by myself last night. My husband works late on Monday nights and I usually spend the evening with Maria.
What I love about Monday nights is that I can cook anything I want. I’m very lucky that my husband always eats what I cook and loves it 90% of the time, but there’s a handful of things that I LOVE and he HATES.
Lentils is one of them.
I love lentils. I grew with my mom making lentil soups and pasta with lentils. Pasta con lenticchie as we’d call it in Italian. It was so comforting to me and it’s something I still love today.
Last night was my chance to make some lentil soup. I used Bob’s Red Mill vegi soup mix that had lentils, among many other things, in it.
The soup was filled with green split peas, yellow split peas, barley, lentils and vegetable pasta. I added some chopped carrots, celery & onion to the mix.
I was very happy with the end result. The soup was delicious and I enjoyed every last drop. I’m so glad I made extra because now I have my lunch ready for the next 2 days. YES!
Each serving of soup had a whopping 21 grams of protein and 19 grams of fiber. Does that say nutritious or what?
On another note, I’ve been wanting to introduce my husband to you all. I’m kind of getting tired of saying “my husband” all the time. Over these past couple months of blogging I’ve started to get to know many of you. I really would love for you all to get to know Maria & I even more!
I’ll do a little post on my husband tomorrow. How does that sound?
